The Most ‘Instagramable’ National Holidays (U.S.)

It seems like every day I visit Instagram the masses are posting about some national holiday I’ve never heard of. And I feel late. So even though its half way through the year I decided to look up all the national holidays so that I can participate in my favorites for the rest of the year. I compiled this list of the most “Instagramable” (in my opinion) national holidays, this way we all can take part in the holiday fun! And you don’t have to search through the database like I did. Please note: this list does not include national holidays that do not fall on a specific date each year like Mother’s Day, Mardi Gras, and Thanksgiving.

My Staycation at the Westin Fort Lauderdale

I love reading about the exciting travel adventures of brave bloggers who travel solo. Although, I travel solo for work conferences and meetings. I’m just not ready to have a solo travel experience where I have to explore a new or foreign place on my own. So, instead of a solo adventure, I tested the water with a “solo-ish” staycation. We will talk about the “solo-ish” part in a future blog post. I chose the Westin Fort Lauderdale for my staycation. And it did not disappoint! (more…)



“Dance it Out” – My Happy Playlist

Did you know that dancing is a stress reliever? Dancing is actually a great cardiovascular workout, it releases the same feel-good endorphins as traditional exercising. And it’s fun! In fact, dancing has been scientifically proven to help reduce both anxiety and stress levels. According to Psychologytoday.com, “in a study at the University of Derby, depressed patients given salsa dancing lessons improved their moods significantly by the end of the nine-week, hip-swiveling therapy.”

The best part is you don’t need a formal dance class to experience the feel-good benefits of dancing. You can dance by yourself behind a closed-door and dance yourself happy.  If you’re a fan of  Shonda Rhimes and ABC’s Thursday night lineup “TGIT”  then you already know that when life gets tough; sometimes you just have to “Dance it Out”! Shonda often writes scenes where her main characters “Dance Out” their woes to a funky beat!

Summer is here and its time to drink a pina colada and lay out under the sun with a good book… preferably some chick lit. According to GoodReads.com chick lit is defined as a “genre fiction which addresses issues of modern womanhood, often humorously and lightheartedly.” When it comes to summer reading a like an upbeat, fast pace, and a light-hearted fiction novel. I’ve complied some of my favorite chick lit novels that are perfect for a day at the beach or a summer vacation.

10 Swimsuits Under $30Happy Monday, everyone! Summer solstice (first day of summer) is only a couple of weeks away. So, I wanted to share a few flattering swimsuit I found on Amazon for less than $30. The cool thing about shopping on Amazon is that they have a customer image section. If you scroll down on the product’s webpage (near the reviews) you will find the customer images section. So not only do you get to read the customer reviews; you can also see the swimsuit on “real” women. This feature makes shopping online for a swimsuit a little less scary.

Easy Weeknight Meal – Tofu Cauliflower Fried Rice

Tofu Cauliflower Fried Rice

Since summer is right around the corner, I’ve been trying to incorporate more low carb or no carb meals into my weekly routine. This Tofu Cauliflower Fried Rice dish is perfect for a no carb meal and can be modified (remove the egg from the ingredients) to be completely vegetarian. You can serve this dish on Monday if you practice Meatless Mondays.

In addition, the Tofu Cauliflower Fried Rice is a great weeknight meal because it only takes about 15 minutes to make; if you purchase a bag of “cauliflower rice” instead of using a food processor on a head of cauliflower. I highly recommend using the pre-prepared “cauliflower rice”. It works perfectly in this dish.

The “cauliflower rice” is a substitute for traditional rice, and I must say in this meal I don’t miss the rice. The Tofu Cauliflower Fried Rice is both a filling and flavorful meal. Here’s the recipe!
